NOVELTY – The method involves inserting laser radiation or an LED in range of wave length between 400 nm and 2000 nm in an optical fiber, where end of the fiber is provided in contact with a substrate. The fiber is inserted in the substrate, and is encapsulated in a protective casing that is made of an inert material to support procedures of sterilization. Acquisition and storage of the values of intensity of reflected light are carried out as a predetermined sampling rate. Curve of intensity of light is determined in time, where the derived adjusted curve is determined. ADVANTAGE – The method enables monitoring alcoholic fermentation of biological process in real time, optimizing production process and consuming sugars present in liquid medium and converting into ethanol.
